Elizabeth Lohrman

Elizabeth Lohrman, registered and licensed dietitian, received her M.S. in Nutritional Sciences from Ohio University. Certified by the Oklahoma State Board of Medical Licensure and Supervision, she is a member of the Academy of Nutrition and Dietetics, SCAN, and the Oklahoma Eating DisorderAssociation. As coordinator of nutrition services for the Oklahoma State University Department of Wellness, she assists and advises students, faculty, and staff about good health and disease prevention by focusing on turning positive nutritional habits into life-long commitments. She counsels individuals for a variety of health issues including eating disorders, weight management, diabetes and cardiovascular disease.

The food showcased in this cookbook aims to nourish the body and to be enjoyed. This book addresses both those who want nutritious meals without spending half a day in the kitchen and those who do not wish to compromise taste for time. Many of the recipes are based on the Mediterranean style of cooking with olive oil. To furnish the OSU community with as many choices as possible, this book adds gluten-free and vegetarian recipes too. The recipes are also analyzed for nutrient content.
